Chocolate Camaieu Grande with Mousse

My son and I perfected this from a family original - deciding ours needed to be less sweet, more glossy and light as a cloud.

PREPARATION:

STEP 1:

Whisk six egg whites into fluffy peaks, adding 3 tablespoons of fine white granulated sugar towards the end to stiffen them.

STEP 2:

Melt 200g (7.5oz) of good quality dark chocolate in a bain marie (a bowl over hot water) with around 4 tablespoons of butter and one lightly beaten egg yolk. (The yolk will make the mousse beautiful and glossy!)

STEP 3:

Gently turn the slightly cooled and softened chocolate mix into the egg whites with a large whisk without delay. Be careful not to deflate the cloud like texture by over mixing. Chill immediately and right up until serving, which I like to do at the table from one enormous bowl, which feels very decadent!
